1.Put the mint and puree in a julep cup, and muddle slightly.

2.Fill with crushed ice and add the cognac.

3.Stir with a mixing spoon to obtain a consistent texture, top up with ice, and finish with the dashes of bitters.

4.Decorate with half a passion fruit, a liquorice stick and a mint sprig.
